A slice of chocolate pie for the road
Preheat your oven to 220°C (425°F). Line a pie tin with your preferred dough (homemade or store-bought). Fill the dough with around 300g of pie weights (dried beans, baking beads, or another pie tin) and bake for 10 minutes.
Meanwhile, gently melt the 150g of chocolate and 100g of butter together in a saucepan over low heat until smooth and glossy. Incorporate 60g of granulated sugar and 3 egg yolks until combined.
Beat the 3 egg whites in another bowl with 40g of granulated sugar until they form stiff peaks (when the whites hold their shape and don't droop). Gently fold the whipped egg whites into the chocolate mix until just combined.
Incorporate 50g of flour, followed by 50g of roughly chopped chocolate. Pour the filling into the pre-baked pie crust and bake at 180°C (350°F) for 20-25 minutes, or until the edges are set and the center is slightly wobbly. Let the pie cool completely before serving.
