Foolproof mayonnaise recipe
Begin by cracking one egg into a bowl.
Next, add a tablespoon of mustard, a pinch of salt, a pinch of pepper, and approximately 5cl of oil.
Using a hand blender, blend the ingredients for a few seconds. Make sure to keep the blender at the bottom of the bowl and move it up and down to effectively emulsify the mayonnaise.
Continue
adding more oil gradually, between 190 and 250mL, while blending, until the
mixture reaches a firm consistency.
