Poutine Express 🇨🇦

Make 2 servings of fries, baked or fried.

In a pot, melt 3 tablespoons of butter. Sauté 1 chopped onion, 4 minced cloves of garlic, and 3 finely cut chilies. Make a roux by adding 1/8 cup of flour to this mixture, then stir and sauté for 2 minutes or until the raw flour smell disappears.

Gradually add 1 1/2 cups of water. Sprinkle in 1 cube of broth (it can be veg or 1/2 beef, 1/2 chicken). Add 2 tablespoons of ketchup, a dash of white vinegar, paprika, garam masala, black salt, pepper, coriander & cumin powder, and parsley. Stir and simmer until the sauce thickens.

In a bowl, place 1 serving of fries. Top with diced mozzarella, grated cheese, and fried onions. Pour as much sauce as you want on top.

Many toppings are possible, be wild! You can add vegetables according to your taste, chicken, pulled pork, or even eggs. I've always made the "classical" version, but I believe the possibilities are endless.
